So I am interested in taking on the foxhound. So I'll be posting my work here.

Off to a good start! I know you'll be refining it quite a bit; my only comment at the moment is that the tail may be slightly too long.

Started detailing out the face.
At 2040 tri's
For the ears. Would it be better to model them up like i have it or model them folded over like the ears in the reference?

Looks good! Ears should be flat and folded over--see the head close-up in the reference photos. I can get you more close-up images if you want.

Thanks for the new reference images.
Here's where I'm at so far with the foxhound. Right now he is just shy of 2400 tri's.
How much of the inside of the mouth do i need to model? Does he need teeth and a tongue?

It's coming along nicely! A couple thoughts:
1) For the mouth, we will have it bark, but that'll be a very brief glimpse of the mouth, so I think you can keep it quite simple, with roughly modeled teeth and tongue.
2) In the side views, the head looks a little boxy/big to me, but it looks better in the front view of the face, so maybe it's just the grayness of it deceives my eyes. Could you post a couple more shots of the head so I can be sure?
3) My photos don't show this quite properly, unfortunately, but the rear feet should be placed a bit farther back; it doesn't have to be as much as in the photo I've attached, but somewhere between that and how it is now.

That looks close! The front angle shots look real good, but from the side, the head still looks too blocky. I think the muzzle should taper more, tapering in to smaller snout, and the snout itself should be somewhat diagonal, not totally blunt. Just overall a bit more tailored and refined, if that makes any sense.

here are a few minor tweaks to the face and a few added edge loops at joints.
The dog is at exactly 2500 tri's.
So Unless there are any changes you would like i think the model is done and I'm going to work on the texture.

This looks great, but I worry that the head is still too big. It looks great in the frontal shots, but looking at the profile shots now, I think that the head needs to be shrunk some. It's totally fine if the head uv/texture stays as-is, as we'd like more detail in the head/face. Can you look at the very first reference photos, the profile shots, and scale the head to match?
Here are some measurements to help scale:
-Torso just behind front legs: 24" circumference
-Largest part of the head (top of crown behind the eyes): 16" circumference
-Base of the muzzle, below the eyes: 9"

Here's update. I still need to work on the seems, to hide them.
I made the head smaller.
that purple AO is a tad too noticeable, I would try tweaking.
Nice texturing, hide those seams!

Great! Could you make one more tweak? I didn't notice this before, but there is a small bump on the back of the neck. I think it was just some fur sticking up (from the collar) in the reference photo. Could you smooth that down?
And then, along with the FBX file in the neutral pose, could you do a special pose for me? I want to place a few sleeping dogs on the roads in the 1830s town, all in the universal "sleeping dog" pose. See images below.

Too cute! I mean that, actually. It does look like a cute puppy, not a stray dog. Could you straight the spine/neck/head so they're in a straight line, like the black dog in the reference photos? Also straighten at least one leg some. And not sure if this is possible, but it would be great if the rear paws were relaxed and angled downward, like the front paws are. I can't tell from these angles, but the whole body and legs are resting flat on the ground?
