Alright so,

When extruding along a curve, I place my curve, I select my area to extrude and the curve then click extrude, It comes out all trashed, up the divisions slowly until I get something I like, usually works but most times All the segments are fine except the first one, its usually all twisted or inverted, like the normals are flipped.

I have a feeling it has something to do with my normals, but I can't seem to get them to flip over or reverse. Conform by itself doesn't seem to be working, perhaps conforming a selectio0n?

you'll see its just rotating that set of faces by 180 degrees. Just select the faces in question and delete them. then go in and use the append poly tool to fill the hole. that should do the trick for you. If you extruded those edges along a curve sometimes edges are flipped somehow. this happens a lot when modeling with edge extrudes rather than face extrudes. If you left the edge capped so you could extrude the face it would most likely solve the issue.
